Tasting Notes:  Cups with notes of wine, prune, black currant, and rich cacao nibs.  Plum and red wine acidity compliments the jammy body.  Sweet dark chocolate and roasted cacao finish.

Background Information: In the heart of Costa Rica’s renowned Los Santos region, the coffees of Café Solís & Cordero S.A. are cultivated across 40 hectares of highland terrain in Copey de Dota and Santa María de Dota.  At elevations ranging from 1,650 to 2,000 meters above sea level, these farms benefit from ideal climatic conditions—perfect for nurturing slow-ripening, high-quality coffee cherries.  Founded in 2018 by Iván Solís Rivera, Alejandra Cordero Solano, and Juan Castro Blanco, Café Solís & Cordero has quickly established itself as a producer of premium specialty coffees with a strong focus on traceability, innovation, and quality.  The team at Solís & Cordero takes a methodical approach to post-harvest processing, offering a range of profiles through Natural, Red Honey, Candy Natural, and Natural Anaerobic methods.  From extended cherry fermentations to controlled drying on raised beds and Guardiola’s, each process is carefully calibrated to enhance flavour and ensure consistent quality.  Beyond production, Café Solís & Cordero is deeply committed to sustainability.  With facilities capable of processing up to 10,000 bushels, the business handles both wet and dry milling onsite, allowing full control over every stage of processing and export.  Through their local roasting brand, Sagaz Coffee, the team also champions the domestic specialty market, offering Costa Ricans access to exceptional coffees that celebrate the region’s citrus, fruity, and sweet flavour profiles.  With a dedication to excellence and a strong connection to place, Café Solís & Cordero stands as a shining example of the innovation and care driving Costa Rica’s specialty coffee sector forward.
