Tasting Notes: Sweet notes of tropical melon, and white wine throughout. A silky body and delicate stone fruit acidity carry through to a plum, milk chocolate, and toffee finish.

Background: The Colombia Bombona is a coffee originating from the picturesque region of Bruselas in Huila, Colombia.  The coffee beans are grown at high altitudes, ranging from 1550 to 1800 meters above sea level, a key factor contributing to their exceptional quality.

The masterminds behind this coffee are Jhonatan and Johan Gasca, who run the renowned Zarza Coffee in Bruselas,  Huila.  Their dedication to producing high-quality coffee is evident through their management of three farms, where they meticulously cultivate and process their coffees.  The farms are known for sourcing the well-known Bombona Estate HCS, along with other unique and sought-after varieties, including washed Geisha, Pink Bourbon, and Pacamara.

The coffee’s flavour begins with the harvesting of ripe cherries and the removal of any floaters.  What makes this coffee truly stand out is its unique processing method.  The cherries undergo a 24-hour oxidation process, which serves to lock in the inherent fruit flavours found in the pulp, enhancing the overall sweetness of the coffee.  After this initial stage, the cherries are depulped and subjected to controlled oxidation for another 24 hours, followed by a 72-hour fermentation process, conducted while submerged.  Finally, the beans are carefully washed and dried, ensuring that the distinct flavours nurtured through this intricate process are preserved.

The result is a coffee that delights the senses with a harmonious blend of fruitiness, sweetness, and a unique  complexity that showcases the expertise and dedication of the Gasca brothers.  The coffee stands a testament to the artistry of coffee production, delivering a truly exceptional and memorable experience.
